One of my hobbies is that I like to can (processing food to eat later on). This year I decided to do apple sauce. I've not canned apple sauce before. So it's a new adventure with much peril (to my kitchen... it's a mess). The first batch, I will not do again the same way. I decided I would remove the skins after I cored them and cooked them. Nope. Not again. I'm going to have to peel the beasts so that I can make this go by a little fast because it's hot to take the apple peels out. I'm having to wait until they cool which is time consuming.
I can't make my food mill work. If I could make it work... that would be 90 percent of the battle. Live and learn. There are things I'll do with tomatoes when I can them that I didn't do the first time.
Why do I do something so out dated? Because despite the mess, the pain in the tush the processing can be, and yes the initial expense, it's one of the most relaxing things I've ever done. I love doing it. And at the end of the day, when my perfectly sealed quart jars are lined up in a row, I feel an enormous sense of satisfaction and pride for my accomplishment. And I am not contributing to more waste in the landfill... my jars are reuseuable for the next time I want to can. Which in the end makes it actually cheaper than going to the grocery store.
